About the Farmer - While the Finca Noruega is named for Rafael’s family it’s Carmen who runs the day-to-day operations. All coffee is hand-picked and processed at the Silva’s mill, ‘Beneficio San Pedro’ which enables Carmen to manage the processing and quality control more tightly than most El Salvadorian farmers. The coffee cherries are pulped to remove some fruit and are then dried on raised beds, with mill staff turning the beans regularly to ensure the coffee dries evenly and does not over ferment. All the coffees are also separated by picking date, variety, and lot and then carefully cupped to maximize quality.
