Desta Meja is a coffee producer in Ethiopia working in one of the country’s high-elevation growing regions, where coffee is cultivated at approximately 2300 meters above sea level. At these elevations, slower cherry maturation allows sugars and organic acids to develop gradually, contributing to the vibrant fruit character and clarity commonly associated with Ethiopian Heirloom varieties. He produces traditional natural-processed coffees where freshly harvested cherries are dried on raised beds, promoting consistent airflow around the fruit, allowing for gradual drying and helping preserve the coffee’s inherent sweetness and fruit complexity. Careful attention to cherry selection and drying management helps to ensure that the resulting coffees remain clean, expressive, and balanced.
