Chocolate Coffee Granola: Easy Recipe Using Java Love Coffee

Homemade granola is a great addition to your morning breakfast and is much easier to make than you may think! This recipe is delicious with yogurt bowls, cereal, or on its own as a snack. This recipe is vegan and can be made gluten free with the use of gluten free oats.

Ingredients 

  • 3 cups of oats 
  • 1 cup of raw nuts (pecans, cashews, hazelnuts, almonds, and walnuts are good options)
  • ¾ cup of unsweetened coconut flakes
  • ½ unsweetened cocoa powder
  • ⅓ cup Java Love ground coffee or espresso
  • 2 teaspoons cinnamon
  • ¼ teaspoon salt
  • ¼ cup coconut oil melted
  • ¾ cup pure maple syrup
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat oven to 350 degrees
  2. Add  oats, nuts, coconut flakes, cocoa powder, cinnamon, salt, and ground coffee to a large mixing bowl. Mix to combine. 
  3. Add the melted coconut oil, maple syrup, and vanilla extract. Mix until everything is well combined and the granola is a bit sticky and is a dark brown color.
  4. Transfer to a baking sheet lined with parchment paper. Spread out the granola evenly. Bake for 10 minutes, then stir and bake for an additional 8-10. Stirring and flipping the granola to avoid any burning. 
  5. Allow the granola to cool completely
  6. Serve as is or add to yogurt or cereal
  7. Store in an airtight container at room temperature for up to 1 week
