Homemade granola is a great addition to your morning breakfast and is much easier to make than you may think! This recipe is delicious with yogurt bowls, cereal, or on its own as a snack. This recipe is vegan and can be made gluten free with the use of gluten free oats.
Ingredients
- 3 cups of oats
- 1 cup of raw nuts (pecans, cashews, hazelnuts, almonds, and walnuts are good options)
- ¾ cup of unsweetened coconut flakes
- ½ unsweetened cocoa powder
- ⅓ cup Java Love ground coffee or espresso
- 2 teaspoons cinnamon
- ¼ teaspoon salt
- ¼ cup coconut oil melted
- ¾ cup pure maple syrup
- 1 teaspoon pure vanilla extract
Instructions
- Preheat oven to 350 degrees
- Add oats, nuts, coconut flakes, cocoa powder, cinnamon, salt, and ground coffee to a large mixing bowl. Mix to combine.
- Add the melted coconut oil, maple syrup, and vanilla extract. Mix until everything is well combined and the granola is a bit sticky and is a dark brown color.
- Transfer to a baking sheet lined with parchment paper. Spread out the granola evenly. Bake for 10 minutes, then stir and bake for an additional 8-10. Stirring and flipping the granola to avoid any burning.
- Allow the granola to cool completely
- Serve as is or add to yogurt or cereal
- Store in an airtight container at room temperature for up to 1 week
