Cupping is the standard method used across the specialty coffee world to evaluate quality. It is both structured and sensory. Our team begins by grinding freshly roasted beans and placing them into small bowls. Hot water is poured directly over the grounds, releasing an immediate bloom of aroma. This moment tells us a lot. Are the notes fruity or floral? Deep or nutty? Bright or earthy? Coffee begins to reveal its personality the second water hits the grounds.
Once the coffee steeps, we break the crust of grounds on top, inhale deeply and take notes. This is where cupping becomes a quiet form of storytelling. Every origin has something new to say. A coffee from the Dominican Republic might offer strawberry and sweet cream. A Guatemalan lot may lean cocoa rich and smoky. An Ethiopian natural could be bursting with blueberry and jasmine. By tasting coffees side by side, we compare body, acidity, sweetness and balance.
Then comes the tasting. We evaluate how each sample performs from first sip to cooling stages. A great coffee maintains clarity and sweetness even as it cools, which is why roasters revisit each bowl multiple times. The goal is not just to identify flavors but to understand how the roast unlocks or mutes those qualities. If something tastes muted or sharp, we adjust. If a note feels underdeveloped or overpowering, we revise the roast curve. Cupping guides all of these decisions.
