Pumpkin Season, Java Love Style: At Home Version

Pumpkin Oatmeal Cookies

Ingredients: 

  • 1 cup unsalted butter, softened

  • ½ cup light brown sugar

  • ½ cup granulated sugar

  • 1 cup pumpkin purée

  • 1 tsp vanilla extract

  • 1 ½ cups all-purpose flour

  • 1 tsp baking soda

  • 1 tsp pumpkin pie spice

  • ½ tsp salt

  • 2 cups old-fashioned oats
    (Optional: pumpkin-spice buttercream for topping)


How to make: 

Cream butter and sugars, then mixing pumpkin, vanilla, and pumpkin spice. Add oats, flour, and baking soda untilIt's combined. Scoop onto a baking sheet, flat and slightly, and bake at 350°F until set.You can also add pumpkin spice buttercream for an extra festive touch 


This recipe combines pumpkin puree, warm spices, and oats for the perfect autumn treat. 



Coffee-Soaked Pumpkin Spice Cake 

Ingredients: 

  • 1cup/230 grams unsalted butter (2 sticks), at room temperature

  • 1½cups/190 grams confectioners’ sugar

  • 2tablespoons pumpkin pie spice, plus more for sprinkling

  • 2teaspoons vanilla extract

  • ½teaspoon kosher salt

  • 2cups/255 grams all-purpose flour

  • 1¾cups/415 milliliters cold heavy whipping cream

  • ½cup/4½ ounces canned pumpkin purée (not pie filling)

  • ½cup prepared coffee, at room temperature


How to make: Beat butter, sugar, pumpkin spice, vanilla, and salt until smooth, then mix in flour and cream. Press the dough into two pans and bake at 375°F for 20–25 minutes until golden. Cool completely. Whip heavy cream, sugar, vanilla, and pumpkin purée until thick. Layer the cookies with coffee and whipped cream, finishing with a dusting of pumpkin spice. Chill overnight so the cookies soften into a rich, cake-like texture.

Homemade Pumpkin Pie Spice Syrup

Ingredients:

  • 2 cups brown sugar

  •  1/2 cup pumpkin puree

  •  2 cups water


Skip the store-bought version to make your own fall syrup in minutes! Combine brown sugar, pumpkin puree, and water in a pot, then simmer gently for a few minutes. Add vanilla, pumpkin spice and cinnamon for extra warmth. Let it cool, pour into a jar, and enjoy it in your coffee, lattes or desserts all season long.
